Summer Recipe Pairings

2017 Sequel & Bison Burgers

A twist on the classic grilled summertime burger, bison brings just the right amount of gamey qualities to enhance the flavors of our 2017 Sequel Syrah. With a black olive tapenade and savory spiced palate, our Syrah craves something just as piquant on your plate. Feel free to dress up your burger to your preference but a pile of perfectly caramelized onions is a little something extra without bringing too many other flavors to the mix. We’re loving this recipe from Kathleen with The Fresh Cooky because she gives options to adhere to any potential dietary restrictions, plus a bonus list of suggested sides!

2017 Saggi & Lamb Chops

Another classic dish with an adult twist, instead of pork chops—swap in some tender lamb chops! This recipe from Food & Wine is a simple yet stunning way to fill your plate and enjoy with a glass of our 2017 Saggi. Seasoned with garlic and olive oil, these lamb chops are sure to silence a table—everyone will be too busy enjoying to talk! The red fruit notes of the Sangiovese and Cabernet Sauvignon blend married with cinnamon and sweet spice focus on your mid-palate. Then layers of richness and balanced acidity make for a great partner on the dinner table with this garlic and olive oil-rich dish. Food & Wine’s suggested pairing for this dish is a Super Tuscan, which is right in line with Director of Winemaking & Viticulture Gilles Nicault’s style of winemaking for our Saggi!

2017 Feather & Grilled Steak with Salsa Verde

Who doesn’t love a healthy glass of Cabernet Sauvignon with a perfectly grilled steak? We’re certainly happy when we have a beautiful skirt steak placed in front of us with a glass of 2017 Feather waiting to be served right next to this recipe from Bon Appétit. This herb-rich salsa verde-topped skirt steak will be a new, easy, dinnertime classic at your home. A simple and indulgent delight, skirt steak is a fantastic pairing for Cabernet Sauvignon, but especially for our 2017 Feather because of the dark fruit notes laced with hints of rosemary and thyme. The finishing tannins cut through the mild fattiness of a skirt steak for maximum enjoyment.

We hope you’re just as excited as we are to prepare dinner tonight and open up a bottle of Sequel, Saggi, or Feather to enjoy. Pull the cork, fill your glass, raise it, and be sure to tag us on Instagram with your summertime Long Shadows pairings!
